Gnocchi salad with bacon and broccoli

Ingredients

Servings: 4
  • 600 g Broccoli
  • 7-10 Tbsp Salt
  • 200 g Bacon
  • 400 g fresh gnocchi (cooling shelf)
  • 1 (approx. 100 g) Head Radicchio
  • 2 Shallots
  • 4 TABLESPOONS Vinegar
  • 2 TABLESPOONS Honey Mustard
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Olive oil

Directions

    Clean and wash the broccoli and cut it into florets. Cook broccoli in boiling salted water for about 6 minutes, drain and rinse with cold water. Cut the bacon into pieces of about 3 cm length. In a frying pan without fat let it crisply drain.

    Add gnocchi to the bacon and fry for 6-8 minutes. Clean the salad, wash and shake dry. Roughly pluck leaves.

    Peel and finely dice the shallots. Mix vinegar, mustard, shallots, salt and pepper. Add oil in portions with a whisk. Add salad, broccoli and vinaigrette to the gnocchi and mix well.

    Season to taste with salt and pepper. Serve salad lukewarm.
