For the glaze 2 chillies wash, clean and chop finely. Mix honey, mustard, 2 tablespoons of oil and chilli. Dab meat dry. Heat 1 tablespoon of oil in a frying pan. Brown the meat all around.
Coat the roast all around with the prepared glaze. Cook in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for approx. 1 1/2 hours. For the vinaigrette, whisk vinegar, salt, pepper and sugar together. Add 4 tbsp. oil drop by drop. Clean and wash the rocket and shake dry. Remove the finished roast and let it rest for about 5 minutes. Cut the roast into slices. Arrange salad and roast and garnish with chilli.
