Knead the flour, cool fat, sugar, salt, spices and ginger plums into a smooth short pastry. Wrap in cling film and put in a cool place for about 30 minutes. Roll out the dough on a floured work surface to a thickness of about 1/2 cm. Use a dough wheel to roll out small rectangles (4x5 cm). Cut one third of the rectangles diagonally into triangles. Bake all cookies in the preheated oven (electric cooker: 200 °C/ gas: level 3) for 12-15 minutes.
Cut ginger plums into thin slices. Then cut out hearts, stars and triangles or cut into fine strips. Dissolve the couverture separately. Dip rectangles into dark chocolate, triangles into light chocolate (note: in the photo also light rectangle and dark triangle!) and carefully place the cookies on top of each other. Decorate with ginger. Results in about 48 pieces
