Fruity strawberry-lime jam (diabetics)

Ingredients

  • 850 g Strawberries
  • 7-10 Tbsp Juice of 3-4 limes (alternatively lemons)
  • 250 g (approx. 12 g) Fructose or 3 teaspoons liquid sweetener
  • 1 (25 g) Bag of "light" gelling agent

Directions

    Wash, clean and coarsely dice the strawberries. Weigh out 800 g of flesh. Halve and squeeze limes. Measure 150 ml juice

    Mix the gelling sugar, strawberries and lime juice well in a large pot. Bring to the boil while stirring constantly and boil for exactly 3 minutes

    Fill jam brimful into prepared twist-off jars and seal. Let cool upside down for about 5 minutes

    Shelf life approx. 6 months
