Clean and wash the spring onion and cut into fine rings. Peel the mango and cut into fine cubes. Cut cheese into slices. Cover 4 tortillas with cheese. Spread leek onion rings and mango cubes on the cheese.
Finish with the remaining tortillas. Put 1 brie tortilla in 2 pans without fat and roast for about 3 minutes on each side. Remove the finished tortillas and repeat the process with the remaining tortillas.
Cut tortillas into pieces and sprinkle with pink berries.
