##Zucchini## wash, clean, halve lengthwise and cut into thin slices. Cut ham into small cubes. ##Wash and shake dry the basil## and cut the leaves of 5 stems into thin strips.
Melt the fat. Mix flour and baking powder in a mixing bowl. Add eggs, milk, ##ricotta## and liquid butter and mix to a smooth dough. Season dough with nutmeg, salt and pepper.
Heat the oil in portions in a frying pan. Add 1/4 ham cubes, zucchini slices and basil strips to the pan and fry briefly. Spread 1/4 of the dough on top and fry over medium heat for about 4 minutes, turning.
Remove, keep warm and fry 3 more cakes. Garnish the cakes with the remaining basil.
