Ingredients

  • 1 TABLESPOON Cornstarch
  • 4 TABLESPOONS Soy sauce
  • 600 g Chicken filet
  • 1 red pepper
  • 1 small bunch of spring onions
  • 100 g Mung bean seedlings
  • 20 g Ginger Root
  • 2 TABLESPOONS Sunflower oil
  • 400 g Rice noodles
  • 7-10 Tbsp Salt
  • 200 ml Gefügelbrühe
  • 1-2 TEASPOONS Sambal Oelek
  • 7-10 Tbsp Coriander

Directions

    For the marinade, stir the starch and soy sauce until smooth. Wash the meat, dab dry, turn in the marinade and chill. Clean, wash and cut the bell peppers into strips. Clean, wash and cut onions into rings.

    Wash the seedlings and drain well. Peel ginger thinly and grate finely. Heat the oil in a pan and fry the meat for 8-10 minutes while turning. Cook pasta in boiling salted water according to package instructions.

    Remove meat from the pan and keep warm. Fry the vegetables briefly in the cooking fat. Add stock, bring to the boil and simmer for 1 minute. Season to taste with salt, ginger and sambal oelek. Mix noodles and vegetables.

    Cut the meat into slices. Arrange noodles and meat in plates. Garnish with coriander.
