Fried semolina noodles with mandarin-vanilla sauce

Ingredients

  • 3/8 l Milk
  • 1/2 Vanilla pod
  • 2 TABLESPOONS + 20 g sugar
  • 1 TEASPOON Cornstarch
  • 2 Egg Yolk
  • 60 g Common wheat semolina
  • 1 pinch Salt
  • 20 g Butter
  • 1 TEASPOON ground cinnamon
  • 100 g Mandarin oranges (canned)
  • 7-10 Tbsp Mint

Directions

    Boil 1/8 litre milk, except for 2 tablespoons, vanilla pod and 1 tablespoon sugar. Stir starch with 2 tablespoons of milk until smooth, stir into the boiling milk and bring to the boil again. Stir 1 egg yolk with some vanilla sauce until smooth and stir into the sauce. Remove the vanilla pod. Put the vanilla sauce in a cool place.

    Bring 1/4 litre of milk to the boil. Stir semolina, salt and 20 g sugar into the milk, bring to the boil and allow to swell a little. Stir in the rest of the egg yolk and let it cool down. Form 3 longish dumplings from the semolina. Heat butter in a pan. Brown the dumplings all around. Mix 1 tablespoon of sugar with cinnamon. Remove the dumplings and roll them in cinnamon sugar. Fold the mandarins into the vanilla sauce.
