Fried scampi skewers with mango-chili sauce

Ingredients

Servings: 6
  • 36 Frozen raw shrimps (without head, in shell; approx. 1 kg)
  • 1 (approx. 480 g) ripe mango
  • 60–75 g Spring onions
  • 1 small red chili pepper
  • 200 g Chilli sauce for chicken
  • 1-2 TABLESPOONS Lemon juice
  • 4-5 Tbsp Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Lemon wedges
  • 12 wooden skewers

Directions

    briefly rinse the glaze of the shrimps under running water, then defrost at room temperature for 1-1 1/2 hours

    Cut the mango off the stone. Peel the flesh, dice roughly and puree. Clean and wash spring onions, cut them into fine rings or chop them. Wash the chilli pod, remove the seeds and cut the pod into fine rings. Mix mango puree, chilli sauce, spring onions and chilli. Season to taste with lemon juice

    Rinse the shrimps again, peel them down to the tail fin and remove the intestines. Put 3 prawns on each skewer. Heat 2-3 tablespoons of oil in a large frying pan and fry half of the skewers for 3-4 minutes, turning them over. Season with salt and pepper, remove from the pan and keep warm. Fry the rest of the skewers in the same way in the remaining oil.

    Arrange shrimp skewers on a large plate and garnish with lemon wedges. Add the sauce
