Fried potatoes with fried egg

Ingredients

Servings: 4
  • 800 g waxy potatoes
  • 100 g streaky smoked bacon
  • 1 (approx. 80 g) Onion
  • 3 TABLESPOONS Sunflower oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Eggs (size M)
  • 7-10 Tbsp Marjoram

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Cut bacon into strips and fry in a pan over medium heat for about 10 minutes. Peel onion and cut into cubes.

    Fry the last 3 minutes with the bacon. Drain the potatoes, rinse with cold water, peel and slice. Heat 2 tablespoons of oil in a pan and fry the potatoes for 10-15 minutes until golden brown.

    Season to taste with salt and pepper. In a second frying pan, heat 1 tablespoon of oil, beat the eggs one after the other and place them side by side in the pan. Fry over medium heat for 2-3 minutes until the egg whites have set.

    Season with salt and pepper. Remove the fried eggs carefully from the pan and arrange them on the fried potatoes. Garnish with marjoram.
