Fried potatoes au gratin

Ingredients

  • 750 g Potatoes
  • 2-3 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 Onion
  • 200 g Leeks (leek)
  • 150 g cooked ham
  • 3 Gherkins (from the jar)
  • 20 g Butter or margarine
  • 20 Flour
  • 1/4 l Milk
  • 1-2 TABLESPOONS medium hot mustard
  • 50 g grated gouda cheese
  • 1/2 bunch Chives

Directions

    Peel, wash and slice the potatoes and dab them dry. Heat the oil in a large ovenproof pan. Add the potatoes and fry over medium heat for 20 minutes, turning occasionally.

    Season with salt and pepper. Peel and chop the onion. Clean, wash and cut the leek into rings. Cut ham into cubes. Cut cucumbers into slices. Add onion, leek, ham and cucumber to the potatoes 5 minutes before the end of the frying time.

    Heat the fat in a saucepan. Sweat flour in it. Deglaze with milk and boil up while stirring. Season to taste with salt and pepper. Stir in mustard. Pour sauce over the potatoes. Sprinkle with cheese.

    Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) until the cheese has melted. Wash the chives, dab dry and cut into fine rings. Serve gratinated fried potatoes sprinkled with chives.
