Wash the potatoes and cook for about 20 minutes in boiling water. Then rinse cold and peel. Let them rest as long as possible before slicing them. In the meantime cut the bacon into small cubes. Peel and dice the onions. Leave the bacon in a pan until crispy, take it out.
Heat 1 tablespoon of lard in bacon fat. Fry half of the potatoes for about 5 minutes, turning them until golden brown. Season with salt and pepper, add half of the onion cubes and fry for another 5 minutes. Season again. Prepare the remaining fried potatoes in the same way. Put all potatoes in the pan, add bacon again and toss with the potatoes
