Wash the potatoes and cook for 15-20 minutes depending on size. Then rinse with cold water, peel and leave to rest. In the meantime clean and wash the peppers and cut them into bite-sized pieces.
Peel and chop the onions. Cut the cabanossi into slices. Heat 2 tablespoons of oil. Brown the onions and the bell peppers. Season with salt and pepper. Fry the cabanossi briefly. Cut potatoes into slices.
Heat 2 more tablespoons of oil. Fry half of the potatoes in it until crispy. Season with salt and pepper. Fold in half of the prepared paprika mixture and fry briefly more. Prepare the second half in the same way, either afterwards or at the same time.
Pour everything into a pan, season if necessary. Serve with crème fraîche, pickled peppers and parsley.
