Fried meat sausage with tomato salsa and sesame potato wedges

Ingredients

  • 800 g medium-sized potatoes
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 30 g Sesame
  • 1 red and white onion
  • 500 g Pork sausage
  • 1 Garlic clove
  • 1 red chilli pepper
  • 1 small bunch of oregano
  • 1 TABLESPOON Tomato paste
  • 4 Tomatoes (about 100 g each)
  • 1 Spring onion

Directions

    Peel and wash the potatoes and cut them into long slices. Heat 2 tablespoons of oil in a large frying pan and fry the potatoes for about 20 minutes until crispy, turning regularly. Season with salt and pepper. Meanwhile, fry the sesame seeds in a pan without fat until golden brown. Peel both onions. Remove the skin from the sausage.

    Halve the sausage lengthwise and cut into slices. Cut the red onion into thin slices and put them on skewers with the sausage. Finely dice white onion. Peel 1 clove of garlic and cut into pieces. Wash, clean and halve the chilli pepper and remove the seeds. Cut the pod into pieces. Wash oregano, dab dry and put something aside for garnishing. Pluck the remaining oregano from the stalks. Heat 1 tablespoon of oil in a saucepan. Sauté onion, chilli and garlic until translucent. Stir in tomato paste. Wash and clean the tomatoes and cut them into pieces.

Heat 1 tablespoon of oil in another pan. Fry the skewers for 3-4 minutes until golden brown all around. Sprinkle potatoes with sesame seeds. Stir the spring onion into the sauce, simmer for 1 minute more and season with salt and pepper. Arrange potatoes, sauce and skewers on preheated plates and garnish with remaining oregano

Stir the spring onion into the sauce, simmer for 1 minute more and season with salt and pepper. Arrange potatoes, sauce and skewers on preheated plates and garnish with remaining oregano
