Spicy Ajvar roast

Ingredients

  • 4 Onions
  • 3 Carrots
  • 2 Garlic cloves
  • 1 jar (330 g) Ajvar (mild; preparation of paprika)
  • 1-2 TEASPOONS tr. thyme/oregano
  • 2 kg flushed pork neck
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1 collar Spring onions
  • 100 g Whipped cream
  • 3-4 Tbsp dark sauce thickener

Directions

    ##peel onions## Cut 3 into pieces, dice 1 finely. Peel, wash and chop the carrots. ##peel garlic##, press through, mix with 2/3 ajvar, diced onion and herbs

    Wash the meat, dab dry. Season with salt and ##pepper##. Spread Ajvar mixture on a fat pan. Arrange carrots and onion pieces around it. Roast in a hot oven (electric cooker: 175 °C/circulating air: 150 °C/gas: level 2) for about 2 1/4 hours. After approx. 45 minutes, gradually add 3/4 l water

    Clean, wash and cut the spring onions into rings. Remove the roast and keep warm. Sieve the stock. Add the rest of the ajvar and cream and bring to the boil. Thicken the sauce. Stir in spring onions, except 2 tbsp. for garnishing. Simmer briefly. Arrange everything and garnish. Bread and coleslaw are delicious with it.
