Rinse and drain the artichokes. Chop the artichokes and the salad mix. Wash and halve the tomatoes. Mix vinegar, salt, pepper and 1 pinch of sugar, fold in 3 tablespoons of oil.
Mix with the prepared salad ingredients and olives.
First cut the feta in half crosswise, then cut it horizontally into 8 pieces. Whisk the eggs in a deep plate. Sprinkle breadcrumbs onto a flat plate. Turn the feta successively first in the egg and then in the breadcrumbs, press the breadcrumbs lightly.
Heat 2-3 tablespoons of oil in a coated frying pan. Fry the feta for 2-3 minutes on each side until golden brown. Drain on kitchen paper. Serve with the salad. Add the ajvar.
