Fried Feta on Greek noodles

Ingredients

Servings: 4
  • 7-10 Tbsp salt, pepper
  • 250 g Baby spinach leaves
  • 250 g cherry tomatoes
  • 1 Onion
  • 1 Garlic clove
  • 400 g Feta
  • 2 Eggs
  • 4-5 Tbsp Flour
  • 4-5 Tbsp Breadcrumbs
  • 3 TABLESPOONS Olive oil
  • 250 g short noodles (e.g. Kritharaki; Greek rice noodles)
  • 100 ml vegetable stock (e.g. glass)

Directions

    For the noodles, boil 2-3 l salted water (approx. 1 teaspoon salt per litre). Wash and drain the spinach. Wash and halve the tomatoes. Peel onion and garlic. Chop onion finely, chop garlic finely.

    Cut the feta into about 8 wide strips. Whisk the eggs in a deep plate. Put flour and breadcrumbs on a flat plate. Turn the feta successively first in flour, then in eggs and finally in breadcrumbs.

    Heat 2 tablespoons of oil in a coated frying pan. Fry the feta for 4-5 minutes until golden brown.

    Cook the pasta in boiling salted water according to the instructions on the packet. Heat 1 tablespoon of oil. Sauté onion and garlic in it and add stock. Add tomatoes and spinach, steam for 3-4 minutes.

    Drain the pasta and let it drain. Mix with the spinach and season with salt and pepper. Serve with the feta.
