Fried chicken pieces with dill-cucumber vegetables

Ingredients

Servings: 4
  • 1 Chicken breast on the bone (approx. 375 g)
  • 4 (approx. 360 g) Chicken drumsticks
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2-3 TABLESPOONS Oil
  • 40 g Honey
  • 1/2 TEASPOON Sweet peppers
  • 1 medium onion
  • 800 g Cucumbers
  • 20 g Butter or margarine
  • 250 ml Vegetable broth (instant)
  • 1 collar Dill
  • 150 g clotted cream
  • 1 heaped Tsp cornstarch
  • 1-2 TEASPOONS Lemon juice
  • 100 g Tomatoes
  • 7-10 Tbsp Lemon

Directions

    Wash the chicken breast and legs, dab dry and place in an ovenproof dish. Mix salt and pepper with some oil and brush the chicken parts with it. Roast in the preheated oven (electric cooker: 200 °C/ gas: level 3) for 40-45 minutes.

    Mix honey and paprika powder and brush the chicken parts with it about 10 minutes before the end of the cooking time. In the meantime, peel and finely dice the onion for the cucumber vegetables. Wash and peel the cucumbers and cut them in half lengthwise.

    Remove the seeds with a spoon and cut the cucumber into pieces. Heat the fat in a pot and fry the onions in it. Add the cucumbers, steam briefly and season with salt and pepper. Add stock, bring to the boil and simmer covered for 4-5 minutes.

    Wash the dill, dab dry and cut finely, except for a little to garnish. Pour the cucumber onto a sieve, collect the stock and pour it back into the pot. Mix sour cream and cornstarch, add to the stock and bring to the boil while stirring.

    Add cucumber and dill to the sauce and season with salt, pepper and lemon juice. Wash the tomatoes, dab dry and remove the seeds. Finely dice the flesh. Remove chicken breast from the bone and cut into slices.

    Arrange meat and dill-cucumber vegetables on a plate. Sprinkle with tomato concassé and serve garnished with dill and lemon. Boiled potatoes taste good with it.
