Fresh pea soup with bacon

Ingredients

Servings: 4
  • 1 Onion
  • 2 floury potatoes
  • 1 TABLESPOON clarified butter
  • 1 package (100 g) Bacon
  • 300 g frozen peas
  • 750 ml Vegetable broth (instant)
  • 250 g Whipped cream
  • 50 g Fresh cream
  • 7-10 Tbsp pink berries

Directions

    Peel onion and potatoes and dice them roughly. Wash the potatoes. Heat clarified butter in a large pot. Leave bacon crispy in it. Take out and drain on kitchen paper.

    Fry onion, potatoes and peas in hot frying fat until transparent. Deglaze with stock and cream. Bring to the boil and simmer for about 10 minutes. Puree the soup. Arrange in cups and garnish with crème fraîche and pink berries.

    Break the bacon into pieces and add to the soup.
