Peel the ginger and cut into thin strips or cubes. Wash, halve and stone the fruit. Then cut into fine slices.
Wash lime hot, grate dry and peel in fine strips. Halve the lime, squeeze out one half. Mix the juice with honey, ginger and about 3/4 of the lime peel. Mix with the fruit.
Cover and leave to stand for about 5 minutes.
Mix yoghurt and vanilla sugar. Season to taste with sugar. Arrange the fruits, spread yoghurt on top. Decorate with the rest of the lime zest and chocolate.
