Wash the chicken thoroughly and pat dry. Rub with salt and pepper. Cut lemon and lime into slices. Place the chicken, garlic bulb and citrus fruit slices on the greased fat pan of the oven. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for about 1 hour.
Peel and finely chop the garlic cloves. Wash the herbs, dab dry and chop coarsely. Mix both with lemon peel and sprinkle on the chicken about 10 minutes before the end of the cooking time. Arrange chicken and garlic on a plate and garnish with a bouquet of herbs as desired. Serve with fresh baguette bread or roast potatoes
