Franconian vintner steak with bread dumplings

Ingredients

Servings: 4
  • 5 Bread rolls (50 g each; from the previous day)
  • 200 ml Milk
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Onion
  • 3 TABLESPOONS Sunflower oil
  • 1 collar Parsley
  • 2 Eggs (size M)
  • 2 red onions
  • 8 discs Bacon
  • 4 Pork neck steaks (approx. 150 g each)
  • 1-2 TABLESPOONS Flour
  • 1/8 l apple juice
  • 1/8 l red Franconian wine
  • 150 g seedless grapes

Directions

    For the bread dumplings, cut rolls into fine slices. Bring milk to the boil and pour over the rolls. Season with salt and pepper and mix everything well. Cover and leave to stand for about 1 hour

    Peel and finely chop the onion. Heat 1 tablespoon of oil and briefly fry the diced onion in it until transparent. Wash parsley, shake dry, pluck the leaves from the stalks and chop finely, except for a little to garnish. Knead the eggs, onion and parsley into the bread roll mixture. Form 8 dumplings from the dumpling mixture with moistened hands

    Peel the red onions and cut them into strips. Cut the bacon into strips, except for 2 slices. Dab meat dry and season with salt and pepper. Heat 2 tablespoons of oil in a large pan and fry the steaks for about 6 minutes, turning them over. Remove meat

    Cut the remaining slices of bacon in half crosswise, fry until crispy in the frying fat and remove. Sauté onions and bacon strips in the frying fat. Dust with flour. Add apple juice and wine while stirring. Season to taste with salt and pepper. Place the steaks in the sauce and keep them warm until you serve them

    In the meantime, put the dumplings in plenty of boiling salted water and let them simmer in an open pot for about 15 minutes. Wash the grapes, cut them in half and warm them up briefly in the sauce. Arrange dumplings, meat and sauce on plates. Garnish with slices of bacon and parsley
