Ingredients

  • 1/8 l Milk
  • 100 g Honey
  • 115 g Butter or margarine
  • 100 g crunchy oats
  • 25 g Cherries
  • 25 g Candied orange peel
  • 25 g Citation
  • 100 g chopped almonds
  • 150 g Whole milk couverture
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Simmer milk, honey and 100 g fat in a saucepan for about 4 minutes. Heat the remaining fat in a pan. Fry the oat flakes in it until golden brown. Finely chop the cherries, candied orange peel and lemon peel and stir into the honey milk with the oat flakes and almonds.

    Put in a cool place for about 1 hour. Melt the chocolate coating in a hot water bath and let it cool down. Quarter the Florentine mixture. Form 4 rolls (approx. 3 cm Ø) on a floured work surface and cut each into 10 slices.

    Press the slices into shape on a baking tray lined with baking paper. Bake in a preheated oven (electric: 175°C/ gas: level 2) for 12-15 minutes. Allow the Florentines to cool well on the baking tray.

    Warm up the chocolate coating again. Dip the Florentine from the underside into the couverture using two forks. Let it dry on a cake rack. Results in about 40 pieces.
