Ingredients

  • 300 g Flour
  • 30 g fresh yeast
  • 1 TEASPOON Sugar
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 250 g Bacon
  • 7-10 Tbsp (in thin slices)
  • 300 g Onions
  • 4 Egg Yolk
  • 250 g Schmand
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Flour

Directions

    Put the flour in a bowl and press a depression in the middle. Crumble the yeast and dissolve with the sugar in 150 ml of lukewarm water. Pour into the flour bowl and mix with some flour from the edge and cover. Cover and leave to rise for 10-15 minutes in a warm place. Put 3 tablespoons of oil and about 1/2 teaspoon of salt on the edge of the flour and knead all ingredients from the middle to a smooth yeast dough. Cover the dough and let it rise for 20 - 30 minutes. Cut bacon into fine strips.

    Peel and chop onions. Heat the remaining oil in a pan and fry the bacon in it. Add onions and braise briefly. Leave to cool. Whisk 3 egg yolks and sour cream (except for a teaspoon). Season with pepper and a little salt. Knead yeast dough again and cut in half. Roll out each piece thinly, slightly larger than half the baking tray (21x36 cm). Dust with flour and fold up loosely. Place the dough on the baking tray (32x38 cm) in such a way that the edges lap about 2 cm over the edges. Then fold up the dough again. Spread half of the bacon and onion mixture on the dough. Fold the edges onto the filling and press on.

    Knead yeast dough again and cut in half. Roll out each piece thinly, slightly larger than half the baking tray (21x36 cm). Dust with flour and fold up loosely. Place the dough on the baking tray (32x38 cm) in such a way that the edges lap about 2 cm over the edges. Then fold up the dough again. Spread half of the bacon and onion mixture on the dough. Fold the edges onto the filling and press on. Pour half of the egg and sour cream evenly over the filling. Roll out the second half of the dough as described above, place it on the second half of the baking tray and fill it. Whisk the rest of the egg yolk and sour cream and brush the edges of the dough with it. Bake in the preheated oven (electric oven: 200 - 225 ° C/ gas: stages 3 - 4) for approx. 20 minutes. Cut into strips and serve lukewarm. Results in 16-20 pieces
