Fish fillet ratatouille on coloured rice

Ingredients

Servings: 2
  • 100 g Short Term Rice
  • 7-10 Tbsp Salt
  • 1 pack of frozen fillet of saithe with ratatouille
  • 7-10 Tbsp (for 2 people)
  • 2 TABLESPOONS paprika-filled olives
  • 4 Stem(s) Oregano
  • 1 Rosemary stalk
  • 1 Garlic clove
  • 100 g triggered shrimp tails
  • 1/8 l clear broth (instant)
  • 7-10 Tbsp Olive oil
  • 1/2 untreated lemon

Directions

    Cook the rice in 1/4 litre salted water for eight minutes. Cook fish fillet in the microwave at 600 watts for eight minutes. Meanwhile drain olives and cut in half. Wash the herbs and dab dry.

    Put something aside for garnishing. Pluck off the remaining leaves. Peel garlic and dice finely or press it through a garlic press. Put olives, shrimps, garlic and stock in a covered microwaveable dish.

    Take the fish out of the microwave and let it rest for a while. Cook prawns at 600 watts for two minutes. Add the herb leaves. Season to taste with pepper. Put rice on preheated plates. Place fish fillet on top.

    Spread the shrimp and olive mixture over it. Garnish with lemon wedges and the remaining herbs.
