Fillet of beef on pumpkin and grapes vegetables

Ingredients

  • 6 Stem(s) Thyme
  • 1–2 Garlic cloves
  • 2 red onions
  • 750 g Hokkaido Pumpkin
  • 200 g green grapes
  • 6 TABLESPOONS Olive oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Beef fillets (approx. 150 g each)

Directions

    Wash the thyme and dab dry. Peel garlic and onions. Chop garlic finely, cut onions into thin slices. Pumpkin wash, clean and cut into thin slices. Select and wash the grapes.

    Mix pumpkin slices, grapes, thyme, onions, garlic, 4 tablespoons of oil, salt and pepper. Spread the vegetables on a baking tray. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 20 minutes.

    Meanwhile wash the meat and pat dry. Heat 2 tablespoons of oil in a frying pan. Sauté the fillets on both sides and remove. Deglaze frying pan with approx. 3 tbsp. water. After about 10 minutes add the fillets with the frying set to the pumpkin.

    Take it out. Season meat with salt and pepper and arrange with vegetables. Garnish with thyme.
