Fillet of beef in puff pastry

Ingredients

Servings: 4
  • 5 discs (à 45 g) "Jerk-Zuck Puff Pastry"
  • 600 g Mushrooms
  • 2 medium-sized onions
  • 2 TABLESPOONS Butter or margarine
  • 2 Federation Parsley
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 4 (150 g each) Beef fillet steaks
  • 200 g Whipped cream
  • 1 TABLESPOON pickled green pepper
  • 1-2 TABLESPOONS sauce thickener
  • 1 Egg

Directions

    Place the puff pastry slices next to each other and defrost. Wash and clean the mushrooms. Chop half finely. Cut the rest into slices. Peel and chop onions. Heat 1 tablespoon of fat. Fry the chopped mushrooms and onions for about 5 minutes.

    Wash, chop and mix in the parsley. Season with salt and pepper and take aside. Dab fillets dry. Heat the remaining fat in the pan. Fry for about 1 minute on each side and remove. Fry the mushroom slices in the frying fat for approx. 8 minutes. Season with salt and pepper. Add 1/4 litre water, cream and green pepper, bring to the boil. Bind with sauce thickener, bring to the boil and season to taste. Separate egg. Roll out 4 puff pastry slices of 20 x 20 cm each. Put 1 tablespoon of mushroom sauce in the middle of each slice. Place the fillet slices on top and spread the rest of the sauce on top.

    Add 1/4 litre water, cream and green pepper, bring to the boil. Bind with sauce thickener, bring to the boil and season to taste. Separate egg. Roll out 4 puff pastry slices of 20 x 20 cm each. Put 1 tablespoon of mushroom sauce in the middle of each slice. Place the fillet slices on top and spread the rest of the sauce on top. Brush the edges of the pastry with egg white and fold over. Roll out the rest of the dough and cut out into stars. Spread the stars and packs with egg yolk. Bake on a baking tray lined with baking paper in a hot oven (electric range: 200 °C/ gas: level 3) for approx. 15 minutes. Remove the stars after about 5 minutes. Arrange fillet packs, stars and mushroom sauce on plates. Garnish with salad and tomatoes
