Filled beef roulades

Ingredients

Servings: 6
  • 4 Onions
  • 300 g Mushrooms
  • 200 g streaky smoked bacon
  • 6 (à 200 g) Rolls of beef
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 TSP medium hot mustard
  • 2 TABLESPOONS Oil
  • 100 g Whipped cream
  • 1 TABLESPOON Cornstarch
  • 7-10 Tbsp chopped parsley
  • 7-10 Tbsp Roulade needles

Directions

    Peel the onions and cut them into small slices. Clean, wash and slice the mushrooms. Finely dice bacon. Season roulades with salt and pepper and spread with mustard. Spread half of the prepared ingredients on top.

    Roll up the roulades firmly and pin them with roulade needles. Leave the rest of the bacon in a pan until crispy and set aside. Add oil to the bacon fat and heat up. Fry the roulades in this oil until they are well done.

    Add the remaining onions. Pour on 3/4 litres of hot water, cover and stew on medium heat for about 1 1/4 hours. Remove the roulades from the pan and keep warm. Let the frying liquid and remaining mushrooms cook for about 5 minutes.

    Whisk cream and starch and bind the liquid with it. Bring to the boil again. Season sauce with salt and pepper. Serve with the roulades. Sprinkle with rendered bacon and chopped parsley.

    Green beans taste good with it.
