Filet and broccoli pans

Ingredients

Servings: 4
  • 2 Pork fillets (approx. 600 g)
  • 7-10 Tbsp salt, white pepper
  • 1-2 TABLESPOONS Oil
  • 750 g Broccoli
  • 150-200 g Swiss hard cheese (e.g. Gruyère)
  • 7-10 Tbsp possibly approx. 1 tsp. pink berries (pepper-like spice)
  • 1/4 l Milk
  • 4 TABLESPOONS Cognac or brandy
  • 1-2 TABLESPOONS Sauce thickener

Directions

    Wash the fillets, dab dry. Season with salt and pepper. Fry all around in hot oil. Cover and fry for another 10-15 minutes.

    Clean and wash broccoli and cut into florets. Steam covered in a little salt water for about 5 minutes. Drain. Grate cheese. Coarsely crush pink berries

    Remove the fillets. Dissolve the meat with milk and cognac and bring to the boil. Melt half the cheese in the sauce. Bind with sauce thickener if necessary. Season to taste with pink berries and salt if necessary

    Cut the fillets open and put them into small ovenproof dishes with broccoli. Pour sauce over them and sprinkle the rest of the cheese over them. Gratinate in a hot oven (electric cooker: 225 °C/ circulating air: 200 °C / gas: level 4) for approx. 5 minutes. Serve with croquettes

    Drink: cool rosé wine
