Feta minced lasagne with fresh spinach crème fraîche

Ingredients

  • 4 Onions
  • 5 Garlic cloves
  • 5 TABLESPOONS Olive oil
  • 4 TABLESPOONS Tomato paste
  • 2 can(s) (425 ml each) cherry tomatoes
  • 300 g cherry tomatoes
  • 7-10 Tbsp salt, pepper, sugar
  • 7-10 Tbsp Chilli powder
  • 800 g mixed mince
  • 400 g Feta
  • 250 g Mozzarella
  • 12–16 Lasagne sheets
  • 100 g Baby Spinach
  • 150 g Fresh cream

    Peel and finely dice the onions and 4 garlic cloves. Heat 1 tablespoon of oil in a saucepan. Fry half of the onion and garlic cubes in it. Add 2 tbsp. tomato paste, sweat it on and deglaze it with canned tomatoes including the juice.

    Bring to the boil and simmer for about 5 minutes. Wash and halve the tomatoes and add them to the sauce. Bring to the boil. Season with salt, pepper, sugar and chilli powder.

    Heat 2 tablespoons of oil in a large frying pan. Crumble the minced meat into it and fry vigorously while turning. Add the remaining onion and garlic cubes and fry briefly. Season with salt and pepper. Stir in 2 tbsp. tomato paste and sauté briefly.

    Deglaze with 1⁄4 l water, bring to the boil and simmer for 2-3 minutes. Cut Feta and Mozzarella into thin slices.

    Preheat oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer). Put a little tomato sauce into an ovenproof dish and spread it evenly. Place 4 lasagne plates next to each other on top. Layer half of the chopped mass, 1⁄3 tomato sauce and half feta one after the other.

    Place 3 lasagne plates on top. Repeat layers, place the remaining lasagne plates on top and finish with the remaining tomato sauce. Cover with mozzarella. Bake in a hot oven for 50-60 minutes.

    Meanwhile, for the green sauce, select the spinach, wash it and drain it well. Peel and dice 1 clove of garlic. Place the spinach, garlic and 2 tbsp. oil in a tall mixing bowl and puree finely with a hand blender.

    Stir in the crème fraiche. Season to taste with salt and pepper. Remove the lasagne from the oven. Add some spinach sauce and the rest of the sauce.
