Ingredients

Servings: 4
  • 500 g dried black beans
  • 400 g Cabanossi
  • 3 Garlic cloves
  • 2 Onions
  • 1 green pepper
  • 125 g Carrots
  • 2-3 TABLESPOONS Olive oil
  • 7-10 Tbsp ground cumin
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Long grain rice
  • 4 Stem(s) Parsley

Directions

    Soak the beans in plenty of water overnight

    Cut the cabanossi into slices about 1 1/2 cm thick. Peel garlic. Pour the beans into a sieve, rinse and place in a pot. Add cabanossi, garlic and 1.5 litres of water. Bring to the boil, cover and simmer for about 2 hours over medium heat

    In the meantime peel and finely dice the onions. Clean, wash and finely dice the peppers. Peel, wash and also finely dice the carrots. Heat the oil in a pan, add the onions, bell peppers and carrots and cook over a medium heat for 3-4 minutes while turning. Season well with cumin, salt and pepper

    Prepare rice in boiling salted water according to package instructions. 10-15 minutes before the end of the cooking time, add the vegetable mixture to the beans and cook. In the meantime, wash parsley, shake dry and chop finely

    Drain the rice. Season beans with salt, pepper and cumin. Serve sprinkled with parsley. Add rice
