Preparation: Wash the potatoes, boil them covered with water and cook for about 20 minutes. Drain potatoes, rinse, peel and cut into thick slices. Peel onions and cut into slices.
Cabanossi cut into slices. Heat the oil in a large frying pan. Fry the potatoes and onions for about 10 minutes while turning. Season with salt and pepper. Add Cabanossi. Beat the eggs and season with salt and pepper.
Pour egg milk over the potatoes and let it set for about 10 minutes at low heat. Cut the feta cheese into small cubes. Wash the chives and cut into fine rolls. Sprinkle cheese and chives over the farmer's breakfast.
