egg-broccoli ragout in tomato sauce

Ingredients

Servings: 4
  • 750 g Broccoli,
  • 7-10 Tbsp salt, black pepper
  • 8 Eggs
  • 1 can(s) (850 ml) Tomatoes
  • 1 medium onion
  • 1 Garlic clove
  • 1 green peppers
  • 2 TABLESPOONS Oil
  • 2 TABLESPOONS sauce thickener

Directions

    Clean, wash and cut the broccoli into florets. Cover and steam in a little salt water for 6-8 minutes, drain. Boil the eggs for 10 minutes. Quench, peel and let cool off

    Mash the tomatoes in the juice. Dice the sausage. Peel and chop onion and garlic. Clean, seed, wash and finely chop the pepperoni

    Fry the onion, garlic, pepperoni and sausage in hot oil. Add tomatoes, bring to the boil and simmer for 2-3 minutes. Bind and season to taste. Halve eggs. Heat up with broccoli in the sauce. Serve with rice
