Marsala foam with fruits

Ingredients

  • 7-10 Tbsp 1/2 (approximately 600 g) Charentais melon
  • 200 g blue grapes
  • 8 TABLESPOONS Marsala (Italian dessert wine)
  • 1 fresh egg + 3 fresh egg yolks (size M)
  • 75-100 g Sugar

Directions

    Remove the seeds from the melon and cut into slices. Cut the flesh first from the skin, then into pieces. Wash the grapes, possibly halve and remove seeds. Mix the fruits and distribute in 4 dessert glasses

    Mix Marsala, egg, egg yolk and sugar in a stainless steel bowl. Beat in a hot water bath with the whisk of the hand mixer for about 8 minutes until foamy. Spread on the fruits and serve immediately
