Put flour, sugar, egg and salt in a bowl. Warm the milk and dissolve the yeast in it. Melt the fat. Add milk and fat to flour. Mix everything with the dough hooks of the hand mixer to a smooth dough.
Cover and leave to rise in a warm place for about 30 minutes. Knead the dough well again. Shape half of the dough into a rabbit body with little paws. Divide the rest of the dough into 3 equal pieces.
Form a head, 2 paws and 2 ears each. Put the individual pieces together on a floured baking tray to form an Easter bunny. Decorate with almonds. Leave to rise again for another 15 minutes. Brush with whisked egg yolk.
Bake for about 30 minutes (electric oven: 175 °C/ gas: stage 2). Leave to cool down a little. Serve with a pretty bow for breakfast. Makes about 20 slices.
