Dumpling salad with leek and bacon vinaigrette

Ingredients

  • 1/4 collar Chives
  • 4 TABLESPOONS Fruit vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1-2 TEASPOONS Mustard
  • 1 TABLESPOON liquid honey
  • 3 TABLESPOONS Sunflower oil
  • 1 red onion
  • 100 g streaky smoked bacon
  • 1 Stalk leek (leek)
  • 150 g green leaf salad (e.g. endive salad)
  • 2 packages (400 g each) Mini dumplings

Directions

    For the vinaigrette, wash the chives, shake dry and cut into small rolls. Whisk vinegar, salt, pepper, mustard and honey. Add 2 tablespoons of oil drop by drop. Peel and chop the onion. Stir chives and onion into the sauce

    Cut bacon into strips and fry in a pan without fat for about 5 minutes while turning until crispy. Meanwhile clean the leek, cut into rings, wash and drain. Add the leek rings to the bacon and fry for another 5 minutes

    Clean, wash and shake the salad dry, pluck the leaves into bite-sized pieces. Prepare dumplings according to instructions on the packet. Heat 1 tablespoon of oil in a frying pan and fry the dumplings for about 5 minutes. Season with salt

    Arrange dumplings, salad, bacon, leek and vinaigrette
