  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 2 Carrots
  • 4 Onions
  • 5 (approx. 1200 g) Apples (e.g. Boskop)
  • 1 (approx. 1500 g) Head red cabbage
  • 25 g clarified butter
  • 5 TABLESPOONS Cranberries
  • 350 ml clear apple juice
  • 2-3 Bay leaves
  • 6-8 Cloves
  • 40 g Butter
  • 2 Eggs (size M)
  • 100 g Toast
  • 100 g Whipped cream
  • 7-10 Tbsp grated nutmeg
  • 3 TABLESPOONS Oil
  • 400 ml Duck fund
  • 150 ml red port wine
  • 3-4 Tbsp dark sauce thickener
  • 5-6 Tbsp Red wine vinegar
  • 7-10 Tbsp Marjoram and thyme
  • 7-10 Tbsp Kitchen yarn
