Wash thyme, shake dry, pluck leaves from the stalks. Wash, clean and halve the tomatoes. Spread on 2 baking trays covered with baking paper. Season with salt. Dry in a preheated oven (fan-assisted oven: 75 °C) for 6-8 hours with the oven door slightly open
Peel and slice the garlic. Wash the pepperoni and cut into rings. Sprinkle on the tomatoes about 2 hours before the end of the drying time
The tomatoes are ready when they have visibly shrunk and the tomato juice has evaporated. Remove the tomatoes and let them cool down
