Ingredients

  • 175 g Carrots
  • 200 g cooking apples
  • 600 g mixed dried fruits
  • 350 g light muscovado sugar
  • 175 g Beef kidney fat
  • 2 TEASPOONS mixture of spices (mostly cinnamon, nutmeg, allspice...)
  • 7-10 Tbsp Peel and juice of 1 orange
  • 100 ml Rum or Brandy

    Peel and coarsely grate the carrots. Peel apple, remove casing and grate apple. Mix carrots, apple and dried fruit in a bowl. Add remaining ingredients and mix well

    Cover and leave to stand in a cool place for 24-48 hours, stirring occasionally. Pour into clean glasses; make sure that no air bubbles are formed. Close tightly and store in a cool, dry place
