Bring the sugar, 100 ml water and lemon juice to the boil until
sugar has dissolved. Wash apples, grate them dry and slice or cut them into very thin slices (slicer). Add apple slices to the stock. Drain the slices well or wipe the edge of the pot. Place them side by side on 3 baking trays lined with baking paper. Dry in a preheated oven (electric cooker: 100 °C/ circulating air: 75 °C/ gas: not suitable) for approx. 2 hours. When drying without circulating air, the trays should be changed in height after about 1 hour. Pull slices from the paper and let them cool on a cake rack, this way they become firm and crispy. Store finished chips in an airtight tin. If they become soft again, simply dry them again for about 30 minutes.
