Ingredients

  • 500 g Carrots
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Pepper
  • 1/2 bunch Spring onions
  • 250 g Mushrooms
  • 300 g cherry tomatoes
  • 400 g green beans
  • 1 collar Coriander
  • 1 collar flat leaf parsley
  • 300 g Whole milk yoghurt
  • 3 TABLESPOONS Cashewmus (glass)
  • 50 g Cashew nuts
  • 3 TABLESPOONS Oil
  • 400 g minced beef
  • 200 g Mienuddles
  • 4 Eggs (Gr. M)

Directions

    Peel, wash and roughly grate the carrots. Season with salt and 1 pinch of sugar and put aside. Clean, wash and cut spring onions into rings. Clean the mushrooms, wash them briefly if necessary, cut in half or quarters. Wash and halve the tomatoes. Clean, wash and halve the beans. Wash herbs, shake dry and pluck off leaves. Mix yoghurt and cashewmus. Season to taste with salt.

    Cook the beans in boiling salted water for 10-12 minutes. In another pot, bring 2-3 litres of salted water (1 teaspoon salt per litre) to the boil. Roast the cashew nuts in a coated pan and take them out. Heat 1 tbsp. oil in it and fry the mushrooms until golden brown. Season with salt and pepper and remove.

    Heat 1 tablespoon of oil in a frying pan. Fry the minced meat in it until crumbly. Season with salt and pepper. Cook pasta in boiling salted water according to package instructions. Drain and let drain. Drain beans and rinse with cold water.

    Heat 1 tablespoon of oil in a pan, fry the fried eggs in it and season with salt. Turn the eggs, fry briefly, remove and cut into strips. Arrange noodles with minced meat, mushrooms, carrots, tomatoes, beans, spring onions and eggs in bowls. Serve sprinkled with sauce and cashew nuts.
