Croutons with fresh goat cheese

Ingredients

Servings: 4
  • 2 red onions
  • 1 TABLESPOON Sunflower oil
  • 100 ml dry red wine
  • 2 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 Shallot
  • 50 g black olives without stone
  • 20 g dried tomatoes
  • 300 g Fresh goat cheese
  • 12 discs Boxed white bread
  • 4 TABLESPOONS Butter

Directions

    Peel onions and cut them into strips. Heat the oil in a pan. Sauté the onion strips for about 5 minutes. Deglaze with red wine, bring to the boil and braise for about 30 minutes until soft. Season with vinegar, salt and pepper

    Peel and finely dice the shallot. Chop olives and tomatoes finely. Mix cream cheese, olives, tomatoes and diced shallots. Season with pepper

    Cut out white bread slices with a dessert ring (8 cm Ø). Heat butter in portions in a frying pan and fry white bread circles briefly on both sides. Form cheese cream into dumplings with 2 tablespoons and arrange on the white bread circles. Spread the onions on top
