Wash the potatoes and cook for about 20 minutes. Quench and peel. Leave to cool for at least 12 hours (preferably overnight)
Coarsely grate the potatoes. Heat 1 tbsp. clarified butter in a pan (approx. 26 cm Ø). Add half of the potatoes, salt, turn briefly and press together to form a thick pancake. Sprinkle evenly with 2 tbsp. milk. Cover the Rösti and fry over a low heat for 10-15 minutes until a golden brown crust has formed on the underside
Turn the Rösti with the help of a flat lid and carefully turn back into the pan. Fry for another 10-15 minutes. Keep warm. Fry another Rösti using the remaining ingredients. Garnish and serve with the shredded meat
