Crespelle with caramelized apples

Ingredients

  • 2 Eggs (size M)
  • 1 package Vanillin sugar
  • 1 pinch Salt
  • 1 pack of Sauce powder "Vanilla flavor
  • 50 g Flour
  • 100 ml Milk
  • 50 ml Mineral water
  • 100 g Sugar
  • 2 Apples
  • 2 TABLESPOONS Lemon juice
  • 50 ml Grappa (Julia)
  • 20 g clarified butter
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp Mint leaves

Directions

    Beat the eggs, vanilla sugar and salt with the whisk of the hand mixer until foamy. Add sauce powder and flour and stir in. Also stir in milk and mineral water. Let the dough swell for about 20 minutes. In the meantime, caramelise the sugar in a pan until golden (must not brown, otherwise bitter) and add 125 ml hot water while stirring.

    Let it boil down for 5 minutes at low heat. In the meantime, wash, quarter, core and slice the apples. Add apple slices to the caramel mass. Add lemon juice and 25 ml grappa. Simmer for another 2-3 minutes at low heat. Heat clarified butter in 8 portions in a pan. Bake 8 crespelle on each side in the pan until golden brown. Sprinkle the crespelle with the remaining grappa and roll them up. Arrange the crespelle and caramelised apple slices on plates.
