Stuffed zucchini

Ingredients

Servings: 4
  • 2 Onions
  • 400 g Pork sausage
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp dried thyme
  • 750 g Zucchini (5-6 pieces)
  • 1 Garlic clove
  • 1 package (500 g) chunky tomatoes
  • 1/8 l Vegetable broth
  • 7-10 Tbsp Salt
  • 8 discs Bacon
  • 7-10 Tbsp Thyme

Directions

    Peel and finely chop the onions. Add half of the onions to the mince and knead. Season with pepper and thyme. Clean and wash the zucchini and cut off a lid. Hollow out the zucchini and chop the inside and the lid. Peel garlic and chop finely.

    Mix tomatoes, remaining onions, garlic, finely diced zucchini and stock. Season with salt and pepper and place in an ovenproof dish. Fill the zucchini with minced meat. Wrap each one with a slice of bacon and put it into the dish. Bake in the preheated oven (electric cooker: 200 °C/ gas: level 3) for 30 minutes. Garnish filled zucchini with thyme if desired
