Cream Teltower turnips with bread dumplings

Ingredients

  • 4 Bread rolls (approx. 50 g each, from the previous day)
  • 250 ml Milk
  • 1 Onion
  • 1/2 bunch Marjoram
  • 4 TABLESPOONS Butter or margarine
  • 2 Eggs (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 kg Teltow Turnip
  • 250 g Chanterelles
  • 100 g Mushrooms
  • 200 g Whipped cream
  • 1/4 l Vegetable broth (instant)
  • 2 TABLESPOONS sauce thickener

Directions

    Cut the rolls into small cubes. Warm the milk, pour over the rolls and let them stand covered for about 1 hour. Peel and finely dice the onion. Wash the marjoram, dab dry and put something aside for garnishing. Chop the rest of the marjoram. Heat 1 tablespoon of fat in a pan.

    Fry half of the onion in it and add chopped marjoram. Put onion on the rolls, add eggs and knead. Season with salt and pepper. Form 12 dumplings from the dough. Bring a wide saucepan of salted water to the boil, add dumplings and let them simmer at low heat for about 20 minutes. Peel the turnips and cut into pieces. Put the turnips in 3/8 litres of boiling salted water and cook for about 10 minutes, drain. In the meantime carefully wash, drain and clean the chanterelles. Clean and shine the mushrooms. Heat 3 tablespoons of fat in a pan. Fry the mushrooms and remaining onion in it for 3-4 minutes. Season with salt and pepper.

Season with salt and pepper. Add cream and broth and bring to the boil. Add sauce thickener while stirring. Bring to the boil again, season with salt and pepper. Carefully fold in Teltower turnips. Remove the dumplings from the water and let them drain. Teltower turnips, arrange dumplings. Remove some leaves of the remaining marjoram, sprinkle the turnips with it and garnish.

    Add sauce thickener while stirring. Bring to the boil again, season with salt and pepper. Carefully fold in Teltower turnips. Remove the dumplings from the water and let them drain. Teltower turnips, arrange dumplings. Remove some leaves of the remaining marjoram, sprinkle the turnips with it and garnish.
