Put aside some Mandarin oranges. Chop the rest roughly. Chop the nuts as well. Mix cream cheese, chopped mandarins and nuts (keep some for sprinkling).
Season to taste with brandy, salt and pepper. If possible, use an ice-cream scoop to cut off balls from the cream cheese. Arrange a few scoops of lettuce leaves and the remaining mandarins on each plate. Add toasted toast bread
