Ingredients

  • 100 g Raisins
  • 800 g Flour
  • 2 TEASPOONS Baking Powder
  • 400 g Butter or margarine
  • 250 g Sugar
  • 4 Eggs (size M)
  • 1 pinch Salt
  • 2 TABLESPOONS Calvados
  • 1.8 kg sour apples
  • 6-7 TABLESPOONS Lemon juice
  • 500 ml dry white wine
  • 1 knife tip Cinnamon
  • 2 packages Pudding powder "Vanilla Flavor"
  • 30 g Breadcrumbs
  • 200 g Icing sugar
  • 7-10 Tbsp Grease

Directions

    Wash the raisins and dab dry. Mix flour and baking powder. Knead fat in flakes, 125 g sugar, eggs and salt. Cover and chill for about 30 minutes. In the meantime, sprinkle raisins with Calvados. Peel and quarter apples, cut out the core.

    Cut apple quarters into pieces and pour 4 tablespoons of lemon juice over them. Caramelise 125 g sugar in a pot. Pour in wine and boil the caramel loose. Add apple pieces and some cinnamon and simmer covered for about 5 minutes. Mix the pudding powder in a little cold water and thicken the apple compote with it. Mix in the raisins. Remove about 2 tablespoons of the dough, cut the remaining dough in half. Roll out one half of the dough evenly on the greased fat pan of the oven (32 x 39 cm). Prick the bottom of the dough several times with a fork and sprinkle with breadcrumbs. Spread apple compote on top. Roll out the other half (approx. 32 x 39 cm). Cut the dough sheet in half or lay it on the apples as a whole.

    Roll out one half of the dough evenly on the greased fat pan of the oven (32 x 39 cm). Prick the bottom of the dough several times with a fork and sprinkle with breadcrumbs. Spread apple compote on top. Roll out the other half (approx. 32 x 39 cm). Cut the dough sheet in half or lay it on the apples as a whole. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for about 40 minutes. Roll out the removed dough thinly on a floured work surface and cut out small apples. Remove the cake from the oven and let it cool down. Place the apple cookies on a baking tray lined with baking paper and bake for 6-8 minutes. Stir icing sugar and 2-3 tablespoons of lemon juice until smooth and spread the cold cake thinly with it. Let the cake dry for about 1 hour, then cut it into pieces. Decorate the cake pieces with apple cookies and lemon balm

    Roll out the removed dough thinly on a floured work surface and cut out small apples. Remove the cake from the oven and let it cool down. Place the apple cookies on a baking tray lined with baking paper and bake for 6-8 minutes. Stir icing sugar and 2-3 tablespoons of lemon juice until smooth and spread the cold cake thinly with it. Let the cake dry for about 1 hour, then cut it into pieces. Decorate the cake pieces with apple cookies and lemon balm
