Ingredients

  • 375 g Flour
  • 200 g Butter or margarine
  • 275 g Sugar
  • 1 egg (size M)
  • 1 untreated lemon
  • 1 kg sour apples
  • 50 g whole, peeled almonds
  • 75 g crushed almonds
  • 75 g Raisins
  • 1/2 TEASPOON with cinnamon
  • 2 - 3 TABLESPOONS Breadcrumbs
  • 1 Egg Yolk
  • 2 TABLESPOONS Icing sugar for the
  • 7-10 Tbsp Dusting
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Cling film

Directions

    Put flour, fat, 175 g sugar and egg in a bowl. Wash lemon hot, dab dry, grate peel and squeeze the juice. Add the rind to the flour and knead everything into a smooth dough.

    Wrap the dough in foil and refrigerate for about 1 hour. Peel apples, quarter them and remove the core. Cut quarter into thin slices. Mix apple slices, lemon juice, whole and ground almonds, raisins, remaining sugar and cinnamon.

    Roll out 2/3 of the dough to a circle (approx. 32 cm Ø). Line a springform pan (26 cm Ø) with it and press the dough 5-6 cm high onto the edge of the springform pan. Prick the base several times with a fork and sprinkle with breadcrumbs.

    Spread the apple mixture on top and whip the edge slightly over the filling. Roll out the remaining dough. Roll out a circle (26 cm Ø), press in the edge with a fork, place on the apple filling and press the edges well.

    Cut out or cut out apple and leaf decorations from the remaining dough. Decorate the pastry lid with them. Spread with the whisked egg yolk. Bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for approx. 50 minutes.

    Let the cake cool down and serve dusted with the icing sugar. Makes about 16 pieces.
