Couscous with beef vegetables

Ingredients

  • 400 g Beef
  • 3 Onions
  • 3 Carrots
  • 250 g Potatoes
  • 250 g White cabbage
  • 2 Courgette
  • 4 Tomatoes
  • 7 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 1 can(s) (425 ml) Chickpeas
  • 7-10 Tbsp Cayenne pepper
  • 7-10 Tbsp Cumin
  • 7-10 Tbsp Cardamom
  • 7-10 Tbsp Allspice
  • 200 g Couscous semolina (pre-cooked durum wheat semolina of medium size)
  • 7-10 Tbsp Turmeric

Directions

    Wash the meat, dab dry and cut into cubes. Peel onion and also dice. Peel and wash carrots and potatoes and cut them into pieces. Heat five tablespoons of oil in a saucepan and fry the meat and onions for 15 minutes.

    Season with salt. Add the potatoes and carrots, fill up with one litre of water and cook covered for 20 minutes. Clean the white cabbage, quarter it and cut out the stalk. Wash cabbage and cut into strips.

    Wash and halve the zucchini and tomatoes and cut them into pieces. Add white cabbage, zucchini, tomatoes and chickpeas, season with cayenne pepper, cumin, cardamom, pimento and salt. Cook for another 20 minutes.

    Boil up plenty of salted water. Add couscous semolina, remaining oil and turmeric and cook for 10 minutes. Drain the couscous on a sieve. Serve with meat and vegetables.
